Harvested, dried for about two weeks and husked, FRESH! Once dried they have a very long shelf life in the shell, up to 12 months. From our friends local farm in South Kona, Big Island, Hawaii. We have a fairly primitive husking machine so we are husk daily as fresh nuts arrive.
